Still trying to cook very simply and eat healthy, but without compromising on flavor. I've been eating a lot of avocados, and I'm starting to get a bit worried about my fish and egg consumption, as lately I've been getting all my protein from raw fish or eggs.
Anyway, yesterday I bought some raw yuba, and so I had it for lunch. I made a simple dashi-soy sauce, cut up an avocado, topped it with the yuba, and added some yuzu jam that I made. The jam I made especially for use as a garnish and in cooking, so it wasn't too sweet. All together this was wonderfully simple and delicious. Now I just have to get my hands on yuba again.

It's been a rough few months, but I'm back. Still trying to eat healthy, but lately I've also been eating very simply. Usually yogurt or natto for breakfast, with some mozuku, maybe a cabbage salad, and a banana. I've been working a lot so skipping lunch, and then maybe an avocado sandwich or something for dinner.
But tonight, for dinner, I whipped up a tomato, fresh mozzarella, and sweet basil salad. The ingredients were all fresh and on sale, so I was pretty excited. I just seasoned with salt, pepper, balsamic vinegar, and a nice. extra virgin olive oil. Simple, but it felt fancier than what I've been eating recently. Maybe this will inspire me to start getting creative with my cooking again.



I had some rice, too, but I didn't take a photo of that.
