I've been busy lately, trying to finish my work. And I haven't really had much motivation to cook for just me. I've been eating a lot of the same things, lots of very-easy to make things, like salads, raw fruit and vegetables, and smoothies. It's good because I've lost some weight but bad because it's boring--and mentally I think actually working and preparing the meals is very good for me.
I recently ate a chicken, hijiki, carrot and edamame salad in a ginger dressing. It was so good I wanted to try and reproduce it myself. My ginger dressing isn't quite right, and I used tofu somen noodles instead of chicken because I wanted something lighter. I was also fascinated by tofu noodles and wanted to see what they were like. They're actually really great; I'm going to try them again in a few other dishes. Maybe my avocado somen made with tofu noodles is next?



The summer heat is back, which means I won't feel like eating very heavy foods, so these tofu noodles might be a great way to get protein. We'll see, I'm sure I'll use them again. And I'll try to fix the dressing and make this salad again too.
