Still trying to cook very simply and eat healthy, but without compromising on flavor. I've been eating a lot of avocados, and I'm starting to get a bit worried about my fish and egg consumption, as lately I've been getting all my protein from raw fish or eggs.
Anyway, yesterday I bought some raw yuba, and so I had it for lunch. I made a simple dashi-soy sauce, cut up an avocado, topped it with the yuba, and added some yuzu jam that I made. The jam I made especially for use as a garnish and in cooking, so it wasn't too sweet. All together this was wonderfully simple and delicious. Now I just have to get my hands on yuba again.

Not sure about the combination of yuzu + avocado, but otherwise it looks pretty tasty.

I wasn't sure, either, but it worked really well, actually. I think it was because of the yuba. I'm not sure how yuzu and avocado would be together without anything else.
